Bread Roll with Pork Floss Mayonnaise

  • Bread Flour 400.0 g
  • Cake Flour 100.0 g
  • Milk Powder 30.0 g
  • Dry Yeast 20.0 g
  • Bread Improver 15.0 g
  • Sugar 75.0 g
  • Salt 1.5 tsp
  • Unsweetened Condensed Milk 150.0 g
  • Cold Water 150.0 g
  • Chilled Eggs 1.0 egg
  • Unsalted Butter 100.0 g
  • Spring Onion, Finely Chopped For Tossing
  • Milk For Brushing
  • Salted Butter For Spread
  1. Pork Floss Mayonnaise

    • Put all ingredients in a bowl and stir to combine.
  2. Bread Roll with Pork Floss Mayonnaise

    • Sift bread flour, cake flour, milk powder, bread improver in a mixing bowl. Add yeast and whisk to combine. Set aside.
    • Mix sugar with salt, unsweetened condensed milk, icy water and egg in another bowl.
    • Put flour mixture and egg mixture into a food processor, fitted with dough hook and combine until mixture hold together into a ball. Add BEST FOODS margarine and continue kneading until smooth. Remove from bowl and form into a ball. Set aside and rest for 5–10 minutes.
    • Roll the dough with rolling pin to be 1 cm thick and place on greased baking tray. Let proof covered with plastic film for 30 minutes or double its size.
    • Brush the dough with milk and toss with chopped spring onion. Bake in the preheated oven at 350F for 25–30 minutes or until it turns golden. Remove from oven and spread thinly with butter. Set aside on a rack until completely cool.
    • Spoon pork floss mayonnaise all over the bread and roll tightly. Wrap with waxed paper and set aside. Cut into 2 inches wide pieces and serve.
