Chicken Burger
An all-time American favourite dish. Try to serve it with the more colourful tuber chips than the usual French fries for a more exciting presentation.

Ingredients
Chicken

Chicken Thigh, boneless 200 g

Paprika Powder 0.5 g

Coriander Seeds Powder 0.5 g

Breadcrumbs 50 g

Egg, beaten 1 egg
Yuzu Dressing

Yuzu Juice 10 ml

Yuzu Pepper 5 g

Yuzu Zest 5 g

Thai Basil, snipped 2 g

Red Cabbage 50 g

Baby Spinach 10 g

Mini Walnut Bun, cut in half 2 piece
Preparation

Chicken
- Mixed all ingredients except egg and breadcrumbs. Marinate for 1 hour.
- Add egg and breadcrumbs, chill.
- Preheat deep-fryer at 180 degree Celsius, deep fry the chicken for 4-6 minutes.

Yuzu Dressing
- Whisk all ingredients and chill.

Plating
- Preheat pan, add cut bun with margarine and grill to brown.
- Add deep fried chicken, yuzu mayonnaise and salad.
- Garnish tuber crisps.
