For Cold Crepe with Blueberry and Strawberry Fillings

For Cream Mixture

  • Fresh Milk 200 g
  • Sweetened Whipped Cream, chilled 600 g

For Blueberry Filling

For Strawberry Filling

  • Frozen Strawberry 150 g
  • Best Foods Strawberry Filling 300 g
  1. For Cold Crepe with Blueberry and Strawberry Fillings

    • In mixing bowl, sift wheat flour, vanilla powder and Best Foods Baking Powder Double Acting Formula together and set aside.
    • Boil fresh milk, Best Foods Butter-Flavoured Margarine, sugar until dissolved. Turn off the heat. Add vegetable oil and combine the mixture well.
    • Beat eggs into the mixture prepared in Step 2 and combine into the sifted flour mix. Stir the mixture. Add few drops of yellow food colouring. Stir and filter the crepe batter with a sieve until lump free. Put the crepe batter into the freezer for 30 minutes.
    • Heat the pan. Brush a light layer of Best Foods Butter-Flavoured Margarine all over the pan. Pour or scoop the crepe batter onto the pan and swirl to spread it in a thin and even layer. Wait until the crepe is well cooked. Put the crepe on the rack and let it completely cool.
    • Place crepe on flat bottomed container. Scoop cream, blueberry and strawberry fillings. Fold the crepe into a square shape. Chill the crepe for a while. Prior to serving, squeeze the cream and decorate on top with fresh blueberry, strawberry and mint leaves.
  2. For Cream Mixture

    • In a mixer, whisk whipping cream and fresh milk with wire whip at the highest speed until soft peaks form and ready for use.
  3. For Blueberry Filling

    • Combine frozen blueberry with Best Foods Blueberry Flavoured Filling. Mix the ingredients well.
  4. For Strawberry Filling

    • Combine frozen strawberry with Best Foods Blueberry Flavoured Filling. Mix the ingredients well.
